Janine’s homemade ginger ale

This ginger syrup is one of my favorite host gifts. I make a big batch, then bring it with club soda and limes, along with the recipe for my host to make more. Try it poured over fresh pear slices.

Ginger syrup
2 cups water
2 cups sugar
2 cups fresh ginger, peeled and cut into coin-sized slices

Club soda
Lime wedges

First make the ginger syrup. In medium saucepan over medium high heat, bring water, sugar and ginger to a boil. Cook until mixture thickens slightly, about three to five minutes. Remove from heat and let cool to room temperature. Strain through fine sieve. Refrigerate in an airtight container for up to two weeks.

Makes about three cups.

For ginger ale, pour ¼ cup syrup into ice-filled glasses. Top with club soda and stir. Garnish with lime wedges. For a great ginger float, replace ice cubes with scoops of ice cream.
