Fluffy orange butter

Add zing to bread pudding, pancakes or French toast with a sweep of fluffy orange butter. The combination of sweet butter and citrus surprises the palate when spread on just about anything. Replace the orange with lemon if you like.

 

 

4 tablespoons (1/2 stick) unsalted butter, softened
2 teaspoons powdered sugar
1 teaspoon orange zest
2 teaspoons fresh-squeezed orange juice

Cream the butter with a rubber spatula. Stir in sugar until evenly mixed. Add orange zest and juice and stir to combine. Transfer to a small serving bowl. Keep tightly covered in the refrigerator for up to two weeks. Bring to room temperature before serving.

Makes about 1/4 cup.
