Pancake love: the happy return

pancakes - walnutYes, I’ve been away.  I’ve missed being here. 

But what better day to jump back into the kitchen than Fat Tuesday.  Over in the United Kingdom, The Guardian tells us about the importance of pancakes on this day, before we launch into 40 days of Lenten restraint.

I’ll tell you what I’ve been up to lately in another post.  But one of the things that happened is my spiffy Nikon is on the fritz and needs to head to the shop.  Thus, I have no new pancake photos for today.  But there’s plenty of pancake love to go around.

The big photo here is from Fat Tuesday 2009 for silver dollar pancakes with maple walnut drizzle.

And for a little variety, we also have a secretly healthy Cottage cheese and oatmeal papancakes - lemonncakes with lovely luscious lemon curd.

And if you’re like my Uruguayan husband, you can interpret crepes as pancakes, and have some with dulce de leche over here.

Whichever way you celebrate, don’t be stingy with the butter.
